More than just a butcher.
Located at 232 Main Street, less than a hundred yards from the weekly Beacon Farmer’s Market, we feature an elegant back yard, an accessible menu, and the best produce and meats sourced from as close to our front door as possible.
Our produce comes from around the Hudson Valley, but we do supplement with other things - it’s hard to find a lemon between here and Rhinebeck. But the fundamental idea - to thine ownself be true, and know thy farmer - runs through the veins of our shop. We support small, local farms, and proudly feature them across our offerings.
Our pantry is populated with the same ingredients we use ourselves. Transparency being paramount, we want you to know that the only smoke we use is for the brisket and the only mirror is in the bathroom.

Our beef and lamb come from Finger Lakes Farms Co-Op / Grassland Farms in Seneca Falls, NY, on the shores of Lake Cayuga.
Our pigs come from Dustin Gibson and his family at Gibson Family Farm in Valley Falls, NY.
We source our chicken, ducks, and foie gras from La Belle Farm, in Ferndale, NY.
The case changes from week to week; following us on instagram is the easiest way for us to communicate what’s in the case each week. But in addition to fresh meat, we make a variety of stocks, sausages, sauces, bacon, charcuterie, soaps, candles, and other animal and plant-derived products for the body and home that rotate with the season and our supply as part of our philosophical intent to use the entirety of the animals we receive.
At any given time you might find sweet italian sausage, lamb merguez, chicken stock, and marinated artichokes in our reach-in and butcher’s case. Our shop is small, and sometimes we’re out of room to put out all that we produce. If you’re looking for something you don’t see, just ask!
